IGP at last! Our oil has been certified.

Our olive oil is indispensable for our family. But our guests also appreciate our Olio Extra Vergine di Oliva, lovingly made by Giancarlo and our team year after year on our premises here in Buffalmacco.

So we set out to win a product declaration for this oil in order to prove what it has always been: an in-house product of high quality. It’s been a long and exciting journey but we finally made it! This means that our oil can now be called Olio Extra Vergine di Oliva Toscano  IGP (Indicazione Geografica Protetta) di Buffalmacco!

Strictly speaking, a bottle with the label Olio Extravergine di Oliva may contain an oil that comes from different growing regions in Italy.

Our oil had to be stored under vacuum in a specially declared barrel in order to ensure that it really does meet IGP requirements. An inspector came from Florence to take six samples of our oil and have them tested by oil specialists. The appearance and the first smell reassured him that we were storing our olive oil under the right ambient conditions and a thermometer in the room indicated the prescribed temperature. You could feel the tension rising!

After what felt like an eternity, the long-awaited first report came from Florence:

Not only does our oil have an excellent flavour, it also has very low acidity and low peroxide values, both of which are criteria for high quality. This means that it can now be called Olio Extra Vergine di Oliva Toscano  IGP (Indicazione Geografica Protetta) di Buffalmacco!

After 90 days we decanted the olive oil into 0.5 l bottles and are delighted that it is now ready to be enjoyed by foodies!
